Wedding Brainstorm

As some of you may already know, I got engaged this past October. And so now my head is filled with wedding paraphernalia and possiblities. Now that the venues have been chosen (and paid for!), I can finally let my creative juices flow and think about the fun stuff.

I've already decided my theme/colors for my big day, and thought that I'd give you a small peak:

Holiday Treats

It's that time of year again!!

Personally, I don't get the Christmas Spirit until I start my yearly baking while singing along to Christmas Carols in my kitchen.

So I thought that I would share one of my favourite (and easiest) holiday recipes. (Although it's so good, I guarantee you'll make it all year round!)

Homemade Caramel Popcorn

What you'll need:
  • 12 cups air-popped popcorn
  • 1 cup packed brown sugar
  • 1/2 cup white corn syrup
  • 1 cup unsalted butter
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla
  • 2-3 cups mixed nuts
  • a can of butter-flavoured PAM non-stick cooking spray
  • wax paper

1) Pop the popcorn. (duh...)
2) Cover 2 baking sheets with wax paper.
3) Lightly coat the wax paper with the butter-flavoured PAM spray, to prevent sticking.
4) In a medium saucepan, combine: butter, brown sugar, corn syrup and salt. Bring to a boil over medium heat, stirring constantly.  Once mixture begins to boil, stop stirring and let boil for 4 minutes.
5) Remove from heat.
6) Stir in baking soda and vanilla. Mixture will become frothy (it's pretty cool actually!)
7) Stir in mixed nuts.
8) Pour caramel over popcorn and stir thoroughly to complete coat popcorn.
9) Pour caramel popcorn onto the baking sheets.
10) Allow popcorn to cool completely before breaking and packaging.

I tend to make a large quantity of this recipe. To store the popcorn once it's made, I keep it in the fridge in a Freezer-safe Ziploc bag.

Enjoy and Happy Holidays!
